I guess because I just spent the last 2 months getting messages from my loan officer on a home refi that SpamSieve has now been trained to accept these types of messages?

That’s probably it. Also, the corpus is rather large, so it will take a while to learn that you no longer want to receive mortgage messages. You will see better accuracy, and more quickly, if you reset SpamSieve’s corpus (http://c-command.com/spamsieve/manual-ah/reset-corpus) and re-train it with some recent messages (http://c-command.com/spamsieve/manual-ah/using-spamsieve-with-yo).
